Just finished prepping (12) Mason Jars of pickled beets, cabbage, onions, garlic, cauliflower. I spiced it up with jalapeños, coarse black pepper, Sea Salt, apple cider vinegar and minced garlic. It's fucking good...Just got to leave it alone for (24) let breath then seal for a week or two. It's a spicier, more flavorful  version of Mexican Escabeche and I highly recommend it if you like the pickled jalapeños, carrots and onions at the Taco Trucks.

A friend brought me over (8) Mexican Squashes. I thanked him, but deep down I was: "What the hell I'm going to do with all this squash?  I'm not Italian!" I have a very old Chihuahua named Lola AKA "Fats." She's on her way to 19 and is healthy, happy and still moves although a lot slower than before. So been home cooking for her so she's not eating processed kibble or bad dog food. I cook her eggs, specific dog friendly veggies, chicken, fish, red meat etc fresh every morning for the day. Especially red meat which is very good for her. Yet every day she eye-fucks my food suspiciously...Sniffing it like it's poisonous. Stares at me all...

One of my guys just stopped off with some Venison Stew 🍲 his Mama made. I've had venison before in the States and I didn't like it..Had it in beef jerky, enchiladas and lasagna and usually too gamey and okay at best. But this stew is delicious! His Mama also made me some hand made tortillas! I'm shocked it's this good and quite grateful and happy.  😊 The deer here are tiny! But their meat is delicious!
