This weekend, I tried my hand at baking with rye flour for the first time. I usually stick to wheat, spelt, or mixed grain breads, but this time I was determined to bake a pure rye loaf. For context, rye is a bit special. You can't just use a good yeast and be done with it. Instead, it's a process that requires cultivating a sourdough starter and carefully controlling the dough's resting time; otherwise, the bread won't be digestible. The conditions were finally right, so I made time for it... and the result is fantastic (unfortunately, I have no pictures). In my opinion, it's the best-tasting bread I've baked so far. The texture and the slightly sour aftertaste are perfect. Baking bread has truly become a passion of mine 😅

Waiting for the doctors to return so I can finally get on with fixing my health drives me crazy. There is a lot of anxiety and what ifs connected to it and I just want answers...this uncertainty and not being able to move forward with treatment because outside factors control timelines is so incredibly frustrating. I feel that every passing day is lost time in this regard. And since nobody in my social circal seems to care enough to listen to me when I try talking about it and just turn to dumping their shit and their problems on me as soon as we mention health or mental health, I need to vent it out here into the void.

The current state of the world: You cannot tell me that things are not pre-planned any more, the current state of the world is very dire, freedoms being stripped, control over money, what people say, what people can do, the stripping away of privacy, and finally mass-immagration in aims of reducing once fine nations to law less hell holes. I used to believe there is stupidity not malice, now I see malice and careful design from world governments. Almost as is if they are acting from the same playbook. The end result a noose around everyone's necks.
